Having just moved to Denver, I've had a few bouts of homesickness and so I have been making some my childhood favorite comfort foods! Here is an easy one that I modified and cooked in the crock pot ( my new favorite tool as a parent of little ones!)
Ingredients: 2lbs of chunk beef cubes 1/4 cup of wheat flour 2 Tablespoons of olive oil 1/2 cup of red wine 1 cup of beef stock 6 red potatoes chopped into inch pieces 2 stalks of celery diced 1 onion diced 2 carrots, peeled and chopped ( or a handful of baby carrots) 2 cloves of garlic 1.5 teaspoons pink Himalayan sea salt 1 15 oz can of diced tomatoes 1 15 oz can of corn 1 15 oz can of green beans or peas ( whatever I have on hand) Preparation: Put the meat and flour into a bowl or ziplock bag and make sure the meat is coated evenly with the flour. Heat the oil in a large sauté pan over medium/high heat and sear the pieces of meat until all sides are nicely brown. Remove the meat and put it into the crock pot, and the red wine and stock to the sauté pan and bring to boil for one minute, scraping off the bits of meat in the pan. Add the reduced mixture to the crock pot along with the remaining ingredients and combine Cook on low for 6-7 hours.
