Mexican Zucchini And Beef Skillet

We found a new favorite tonight! I was going to make a regular taco salad and I could tell my hubby was over the cold veggies so I went looking for some inspiration! I decided to do a hot salad instead! I personally prefer hot food to cold anyway so it appealed to me too. 

You will need:
  • 2 medium zucchini sliced and quartered
  • 1 1/2 pounds ground beef
  • 2 cloves garlic minced
  • 1 can diced tomatoes , 14 oz can ( you could use a jar of salsa a well)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes

Optional ingredients: corn, diced bell peppers, black beans, chilis, jalapeno
You can also serve over rice if you like and or top with avocado, cheese, or a few tortilla chips! It's really versatile!

Directions:
  1. Brown ground beef with minced garlic, salt, and pepper.
  2. Cook over medium heat until meat is browned.
  3. Add tomatoes and remaining spices. Cover and simmer on low heat for another 10 minutes.
  4. Add the zucchini. Cover and cook for about 10 more minutes until zucchini is cooked, but still firm.

It has been a while since the last time I explored my kitchen! Now that I am finally back, of course I want the very first recipe to be a bomb! I think, preparing Mexican Zucchini and Beef Skillet would be perfect for my comeback. What's good about this recipe is thew fact that it is easy to prepare. A cook just have to know how to follow instruction and they will surely get the perfect taste for this. Hopefully, I will achieve the supposed taste of this recipe so that I can be proud of myself.
